Country videos, oral surgery, and small town antique shops.


So, Chris is down at the National Guard base to be an extra in some country music video. It's going to be a 12 hour doozy. I think it's funny that they asked him to be an extra in a country music video as an airman..when he is an actual airman. Don't they call in models for that?! Ha ha..Don't get me wrong; my baby's a hottie, but that's like work for him. You called him in to be some good looking beef on a music video. Ha ha..whatever saves them money, huh? Atleast he's getting paid for it.
I have a lot things coming up. July 13th is my birthday. July 18th is the day I have my wisdom teeth taken out. Ha ha..that's not even a week apart. Oh well, what can you do? I'll have the house to myself all of next weekend. Thank goodness..I need some time to myself. Maybe I'll actually be able to do some things I've been needing to do..like paint the rest of my closet or something. I've been working on painting the whole bottom of the bordering of my walk-in clost in black and then I was going to finish drawing the cherry blossoms on my wall and paint that in. It kind of looks like doo doo right now. I'm just glad that it's a closet and people don't normally check out your closet on a regular basis. Unless there's closet dwellers that I don't know about; and if so, I'm glad my friends aren't any of them.
I need to go looking for some antique stores. I'm really tempted to start buying and saving up on useless antiques. That's just the southern side to me that just has to be a natural pack rat. Isn't that typical? Maybe I can get back to Lynchburg, TN. and visit the Jack Daniels distillery again..And while we're there I'll check out those small town antique shops. Those are the best. I need a really nice dark wood bookcase. Yes, that would be nice. Something to actually put my many books on. I'll keep my eye out for something.

Lemon-raspberry cupcakes



Ingredients
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3 cups powdered sugar, divided
4 1/2 teaspoons finely grated lemon peel, divided
2 large eggs
1 1/4 cups self-rising flour
1/4 cup buttermilk
4 tablespoons fresh lemon juice, divided
12 teaspoons plus 1 tablespoon seedless raspberry jam
Fresh raspberries (for garnish)

Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners. Using electric mixer, beat butter, 1 1/2 cups powdered sugar, and 3 teaspoons lemon peel in large bowl until blended, then heat until fluffy and pale yellow. Add eggs 1 at a time, beating to blend after each addition. Beat in half of flour. Add buttermilk and 2 tablespoons lemon juice, beat to blend. Beat in remaining flour.

Drop 1 rounded tablespoonful batter into each muffin liner. Spoon 1 teaspoon raspberry jam over. Cover with remaining batter, dividing equally.

Bake cupcakes until tester inserted halfway into centers comes out clean, about 23 minutes. Cool cupcakes in pan on rack. Meanwhile, whick remaining 1 1/2 cups powered sugar, 2 tablespoons lemon juice, and 1 1/2 teaspoons lemon peel in small bowl. Spoon half of icing over 6 cupcakes. Let stand until icing sets, about 30 minutes. Garnish with raspberries.

Raspberry Margarita
Ingredients
15 to 20 red raspberries
2 cups ice
2/3 cup margarita mixer
1 tablespoon orange juice concentrate, thawed
2 teaspoons Rose's sweetened lime juice
Your favorite tequila
Raspberries (for garnish)


Put raspberries in a blender with ice, margarita mixer, tequila, orange juice concentrate and sweetened lime juice. Blend until smooth and slushy. Pour into 2 glasses and garnish with whole raspberries, if desired.
